I love making these spinach and feta egg cups in the beginning of the week to have and re-heat whenever I need an easy, protein-packed breakfast. These are so satisfying and filling because they're full of protein while including the flavors of your favorite quiche. Close your eyes and pretend you're eating them on the coast of the Mediterranean and not the coast of your counter.
