Lemony Kale & Cauliflower Salad

Citrus salads are my absolute fave. Massaging the kale well with lemon juice is crucial to this recipe : not only does it make the flavor better, but it improves the "digestability" of the kale by softening the fibers which yields more comfortable digestion.


It's a delicious accompaniment to a meal, or I like to add a handful of shredded Parmesan, roasted sweet potatoes and grilled chicken to make a meal! Either way you can't lose.
