Hear me out : cauliflower in a smoothie sounds INSANE, right?! Especially coming off a year when it seems nothing can be made without it. I entirely understand your skepticism. The reason I like to add cauliflower to smoothies is twofold grounded in "gentle nutrition" (Intuitive Eating principle 10)!
It's not to decrease the carb count of the smoothie. It's to ADD nutrients and fiber for more nutrition and greater satiation!
