But First: What is Cauliflower?

Cauliflower is a member of the cruciferous vegetable family alongside brussels sprouts, kale, cabbage, and broccoli. Cruciferous vegetables are rich in glucosinolates (the sulfur-containing compound that give this vegetable family unique tastes). White cauliflower is the most common variety, but it also comes in purple, orange, and green! And did you know that the edible portion of this delicious veggie is the flower bud?

Cauliflower Benefits

No matter what variety you choose to eat, cauliflower is a low-calorie vegetable that is chock full of nutrients, fiber, and health-promoting phytonutrients. In fact, cauliflower is an excellent source of vitamin C, K, B6, and folate. It also contains potassium, manganese, magnesium, pantothenic acid, and phosphorus in addition to phytonutrients such as glucosinolates, flavonoids, and carotenoids. These phytonutrients are important antioxidants that can have protective effects against cancer and heart disease
